Physicochemical and functional properties of native starch from seeds of Pterocarpus santalinoides

In order to enhance the value of seeds P. santalinoides, consumed like peanut by certain populations Côte d'Ivoire, studies on a few physicochemical and functional properties have been carried out starch extracted from these seeds. Indeed, humidity rate, percentage amylose amylopectin as well non-carbohydrate composition (proteins, lipids, ash) were evaluated. addition parameters, shape size grains, water absorption capacity, clarity, swelling solubility power syneresis investigated at -15 4 °C for weeks. The results obtained indicate that grains exhibited spherical shapes some polyhedral with smooth outline others.
